Abstract Nitrate and nitrite ions taken from food are the sources of bioavailable nitric oxide (NO) in nitrogen cycle. Some beneficial effects honey on health attributed to ability increase NO production. The variation nitrate levels samples collected different Anatolia regions were clarified using capillary electrophoresis technique. sensitivities both anions improved with application sample stacking method. Separation buffer consisted 30 mmol L −1 formic acid sodium sulfate at a pH 4.0. CE technique revealed that 18 contained anion ranged between 2.53 31.8 mg kg . Nitrite amounts found lower as non-detected 0.533 observed differences varieties may be way determine honey's origin.
